Found North - Peregrine

 


This 20-year-old minimum age stated offering from Found North is shockingly complex.  On the nose you get get a citrus aroma, with a layer of alpine cedar, lemon, lime, and mandarin orange.  The palate is a symphony of flavors that would usually be in competition, but harmonize for a difficult to describe pleasantry on the palate.  The citrus carries through and a bitter chocolate foundation develops.  The woodsy aroma transforms into smoke on the palate, coalescing the wood flavor into a warm toastiness.  It is chewy and dense, but smoother than the proof suggests.  The finish is toasty and peppery with a satisfying, linear burn that fades at just the right speed.  As the spice dissipates, some familiarity sets in: whispers of brown butter, caramel, and toffee linger well into the next sip.

Overall, Found North Peregrine First Flight Whisky is a truly special bottle that is worth trying if you have the opportunity.
